Beef Noodle in Taiwan
From rich red-braised broth to clear consommé — Taiwan's everyday noodle soup
Beef noodle soup is Taiwan's signature noodle dish, split into two camps: rich, soy-and-chili-bean-based hongshao and clear, delicate qingdun. Century-old shops cluster near Taipei's Yongkang Street, and winners of the annual Taipei Beef Noodle Festival always draw long lines. Part of the fun is dialing in the bowl yourself with chili oil and pickled mustard greens on the table.
What Makes It Special?
Hongshao vs. Qingdun
Hongshao is soy-and-bean-paste based — rich and slightly spicy. Qingdun is a clear broth seasoned mainly with salt. First time? Start with hongshao.
Choosing your noodles
Many shops var you pick wide noodles, thin noodles, or hand-shaved noodles. If you don't specify, you'll get the house default.
Table condiments
Pickled mustard greens and chili oil on the table are self-serve. Add a side of xiaolongbao or a small dish to round out the meal.
